We rescue them. 


THE STORY

THE WINTER LAB STORY

Born from Winter Lab 2025-2026, CAVU Refined was created during the winter of 2026 when Master Distiller Tim Ford at Barnstormer Distillery partnered with AI to research barrel rescue methodologies. This collaboration was not meant to replace craftsmanship in crafting spirits, but to enhance it. AI researched vacuum distillation techniques, while Tim executed the process. Together, they created a new category of distilled beverages. Most distilleries hide their failures, but at Barnstormer Distillery, we monetize ours. We’re transparent about what went wrong because in crafting spirits, the rescue is the innovation. The mistake becomes the story, and the disaster transforms into a limited release of our unique distilled beverages.

THE PROBLEM

Barrels of Sub-Par Spirit, Every Distillery Has Them

Over-oaked bourbon. Too-hot rye. Finishing barrels left too long. Experimental mash bills that didn't work. Funky flavors. Unbalanced profiles. These are expensive mistakes for any distillery crafting spirits. Months or years of aging. Premium ingredients. Thousands of dollars in sunk costs.  


INDUSTRY STANDARD:  

Dump it. Blend it away. Mask the problem. Write it off.  


OUR STANDARD:  

Rescue it. Refine it. Release it as premium limited batch distilled beverages.  


We had some problem barrels sitting in our warehouse at Barnstormer Distillery. Unmarketable. Until Winter 2025/2026.

HOW IT WORKS

LAB-GRADE BARREL RESCUE

 Using precision rotary evaporation under vacuum, we selectively remove problem compounds while preserving the soul of the spirit. 

The CAVU REFINED PROCESS

STEP 1: IDENTIFY THE PROBLEM 

Every rescued barrel has a story. Over-finished in maple? Molasses too heavy? We diagnose what went wrong, and what volatiles need to be removed.


STEP 2: VACUUM DISTILLATION   

Precise Low-temperature, low-pressure distillation removes the targeted excess (harsh tannins, overwhelming flavor, unbalanced compounds) while preserving character.  


STEP 3: PRECISION REFINEMENT 

Each batch comes off the rotovap at different proof points (100-160 proof) depending on what we are trying to preserve. We proof down or release at barrel strength based on the spirit.  


STEP 4: LIMITED RELEASE 

Each rescued barrel becomes a numbered batch. When it's gone, it's gone forever. We can never recreate the same problem.

Each batch that comes off the rotovap at Barnstormer Distillery reaches different proof points (100-160 proof) depending on what we aim to preserve. We proof down or release at barrel strength based on the spirit being crafted.


STEP 4: LIMITED RELEASE


Each rescued barrel transforms into a numbered batch. Once it's gone, it's gone forever. We can never recreate the same problem, making every limited release a unique experience.

A: No. Each CAVU Refined release is tied to a specific problem barrel. When that barrel is gone, that batch can never be repeated. This is genuine scarcity. 


A: We rescue barrels that are unmarketable in their current form but have potential character worth saving. Each problem is unique. 


 A: No. Filtration (like cristalino tequila) removes molecules mechanically. Vacuum distillation separates by volatility at low temperature, preserving more character while removing specific problems. 


A: Each barrel comes off the rotovap at different concentrations based on its original proof and the rescue process. We let the barrel determine the optimal proof point. 


A: Currently available only at Barnstormer Distillery tasting room. Illinois regulations limit our distribution. Visit us or join our email list for updates.
